Light Funfetti Cake Dip

1 cup/ 227 g nonfat Greek yogurt
.5 cup unsweetened coconut milk
1 package/ 96 g vanilla or cheesecake
pudding mix
1 tsp vanilla extract
1 tsp truvia baking blend
1 tsp sucralose (Splenda)
2 tbsp rainbow sprinkles (jimmies?)

Stir together the yogurt, milk & pudding mix first until smooth and fluffy. Add remaining ingredients, stir well.
Makes 25 servings (19g/ 1 tbsp) at just 26 calories per tablespoon!
Eat with graham crackers, animal crackers, vanilla wafers, or a spoon.

I will test this using cake batter flavored protein powder instead of the pudding mix, if such a thing exists. I haven’t looked yet.

    It sounds kinda good. Would it make a good pie filling? Maybe with a graham cracker crust?

    It is quite thick and fluffy, so actually it probably would make a pretty good pie filling. Let me know if you try it!

    I was worried a sugar free pudding mix would make it end up tasting too fake-sugary, but if you like the taste of sugar free pudding mixes already (I haven’t tried them, maybe I should!) then go ahead and test the recipe with one. Maybe it’ll work great and save even more calories!
    Let me know your results if you try it. :) I did see a sugar free cheesecake flavored mix at the store, so maybe I’ll give it a go the next time I make this.
