Does anyone have any good resources for going gluten free? Advice?

I'm "bumping" this because I've been looking into going gluten-free for awhile now. I'm interested in the replies.0

Why do you "want " to go GF? It is not a weight loss trick, it is a necessary way of living for those of us with celiac disease. Unfortunately a GF diet will cause weight gain if you use substitutes. As a general rule GF breads, cakes, cookies, etc. have added fat to help hold it together. As the taste is not the same so it really is not a substitute but a new food. Unfortunately those of us with gluten issues must eat this to become well. The weight gain that comes with the healing process is partly because we spent most of our life malnourished and finally the body is getting the vitamins and minerals necessary to live.
Also if you believe you are having gluten issues don't go on the diet until you talk to you doctor. The tests (both a blood test and endoscopy) will not work at all if you are on a GF diet!
