The BEST meal ever (as long as you like mushrooms)

I just posted this in response to a question elsewhere and it inspired me to come here and post it too in case anyone can benefit.

This sauce is AMAZING (as long as you like mushrooms). I don't use any oil but apart from that I used to pretty much follow her recipe. It was delicious but the worst bit was having to remember to soak the cashews (and they are expensive). Then I moved countries and couldn't access cashews. So one day I was inspired to boil a whole head of cauliflower and blend it to a puree with a dash of either almond milk or water (I've tried both and I can't honestly tell the difference so now I just use water). I used that instead of the cashews.
Amazingly both my husband and I thought the new version was just as good as the version with nuts. It is really low calorie. I use a lot more mushrooms than she recommends and that combined with the cauliflower means it makes enough for quite a few meals. I'm not a huge pasta fan so I prefer it on rice or potatoes but it also goes great as a sauce on tofu or tempeh and I'm sure it would be great on fish/meat as well (I'm vegetarian so I've never tried that).
