hawaian/southamericam salad for beef

Hi, I hope someone here can help me.

My parents and parents in.law are coming for dinner tonight, and we are having a nice beef tenderloin on the grill. Usually we get danish or Italian inspired side dishes, but this time I'd like something else.

Can someone help me with a recipe for a salad that could look like it was from hawai/southamerica or somewhere like that?

I love chef John, catch him on YT. There's different ways to prep a South American meal. There's Peruvian, Columbian, Argentinian, etc. Chimichurri is one we all know, so roasted peppers would be the easiest. Mix it with quinoa too even. Or you could do a lentil salad.
