Carb nite fail?

Hey MFP,
Some background info:
July 28th- Started Keto at 121.
August 11th - Dairy/egg intolerance and coconut oil allergy made me kick off, although I was technically under 25 net every day. Started reintroduction at 25 net carbs. Keto brought me down to 117.6-ish.
August 16th- Carb nite. Compromised of two plain bagels, a sweet potato and a serving of peas. Ate to maintenance.
17th: Bloating wasn't too bad. Didn't weight.
18th: Saw improvement in abs, but miniscule.
21st: Floating around 25 - 35 net carbs as reintroduction. I stepped on the scale again today, 118. Possibly water weight from increasing carbs? Maybe. Definition I saw after carb nite is gone.
So, my question is... am I doing something wrong? Was my carb nite to dirty? Should I take a different approach? Maybe two carb nites a week?
I'm also becoming hungry during this time... I'm looking to cut down on peanut butter consumption in exchange for beef, but trying not to go over my set deficit is a struggle. Is it possible that my high protein consumption is stopping progress as well?
