After eating a meal such as lunch, how long should I wait before going on a bike ride?

Depending how much and what you ate, but I would allow a minimum of a half hour to digest. It’s important to allow your body time in a parasympathetic state to aid the digesting process before you start a workout.

As many long distance cyclists eat while riding it will depend on what you ate, how much you ate, how you personally react to that meal, how intense your ride is etc. etc.

I can ride immediately after a carby and easy to digest breakfast but would struggle with a bigger or fattier meal.

If I eat something light, I can run within half a hour of eating. I give larger or fattier meals at least an hour and a half. Personal comfort is going to be a factor too -- what works well for one person may cause discomfort for another.

My cycling mentor introduced me to Soreen malt loaf for eating while riding for energy - he had his slathered in butter. I can and do eat it on long rides but can't tolerate butter on it at all, makes me feel like I've eaten a brick.

Experiment on unimportant rides would be my suggestion OP.
