I gained 30lbs in a few months eating healthy food, I maintain weight exercising over 40hrs a month.
Neither healthy food or regular exercise guarantee weight loss.

What makes you think you are actually in a sustained calorie deficit?

You haven't given any details about yourself, how you are trying to achieve a calorie deficit, your diary is private, your profile is blank and you haven't stated how long you have been stuck.

Without information and context any advice or guidance can only be very generic such as eat less, move more, be more patient.

Okay really since lockdown, I've worked right the way through so not anything to do with not moving . So wondering if it's just stress our bodies release a hormone cortisol during stress that can make us gain. Just literally dont know.

Maybe. My weight crept up a bit during lockdown and I know for sure I was not consuming excess calories. It's going in the right direction again now.

Only thing I can suggest is to monitor your calories even more closely to make sure that side of things is OK. Assuming it is then try a different exercise programme for a few weeks. If you have been doing the same thing your body may have got more efficient at it and you are expending fewer calories than you think.

Sure, cortisol is related to water retention. As a PT, are you trying to lose the last 3 lb of water weight or fat?
If you are trying to lose fat, focus on weighing everything that passes your lips for a defined period of time -- maybe only a week. That may be enough to reveal where the calorie undercount is happening.

If it is hot where you are and you are spending more time outside it may be causing your body to hold on to more water too. Almost everyone I know that is spending more time outside is complaining about their "scale being stuck." I haven't seen a new low myself in many weeks and the same thing, although less dramatically because I was losing at a higher RoL, happened last year.
