Weight Loss Round 2

I’m currently a 40 year old female with a weight of 78kgs.
Ten years ago I was 100kg and lost this weight in about a year. However since then I’ve gone on diet after diet but have not been able to shift from this weight.
I’m now one week into a new diet and this one isn’t restricted to certain food types but just calories controlled (1540 calories) and I try to eat a gram of protein per pound of weight to try to stave off the constant hunger!
My issues have been 1) losing weight all week and then gaining it back on the weekend! 2) weight coming off at a slow clip or a totally stable week - getting disheartened and then giving up. 3) HUNGER - even with all the protein!
At 78kgs I don’t see the weight come off as fast as it did when I was 100kgs. However I would like to be 68kgs as a target and not whince when I see photos!
My hope is - knowing that weight loss can just be slow and that this is ok, and believing in calories in and calories out and that the calories will show up at some point on the scale should help!
I’m truly logging absolutely everything this time and walking or cycling daily - if this doesn’t work... I give up! I’m a new mum and would like to be fit and healthy and give my daughter a good example of balance eating and exercise
