Not a big potato fan (especially if the thing has "eyes"). However, when they're done on a BBQ grill and have that crispy skin?! That's great...but I'll basically only eat it for the skin parts.1

I love to stab it a bunch of times before I put it in the oven.2

instant pot for like 10-15 mins depending on the size of them, natural release for 10 mins then quick release
then cube them and toss em in the cast iron with some duck fat for a few minutes to crisp up on the outside
then take em out and pat dry with some paper towel and toss on a baking tray and into the oven for like another 10-15 mins at 400
you can season them up before they go in the oven, maybe like a bit of paprika, salt, pepper, chili powder. don't go ham on them though- when they're out of the oven you can toss them in the dry seasoning as well if you want some extra kick
also if you wanna fool everyone that you make the best mashed potatoes, but don't wanna do all the work, just mash like one or two actual potatoes and then mix up some idaho instant and combine them all together. nobody will be the wiser.3 -

cube em up and toss em in a slow cooker. then pour a package of taco seasoning on top. then throw a stick of butter on top of that. then drizzle with some oil. red pepper flakes if you wanna live a little. cook em on high for like 3-4 hours until they're soft. toss em a bit like halfway through to make sure they all get coated good in seasoning. then put em on keep warm about an hour before you're ready to eat. pour some mexican shredded cheese in there with em and then some bacon bits and let it get nice and melted up. you can spoon em out into a tortilla or just a bowl if you wanna be healthy I guess. serve em with some sour cream and salsa.4
