Hi all,
I've been cooking more lately, especially sugarless and gluten-free meals. My problem, however, is that everyone who recommends sugar-free and wheat-free diets suggests really complicated recipes. (I mean, where the heck can I get "xylitol"? Right?) Anyone have any quick and easy recipe ideas?

One of my new favorites is broccoli “rice”. Take a bag of broccoli slaw and put it in the food processor on chop til it’s the size of rice and then pan fry with a little oil (I use olive oil spray but if you’re ok using more oil you could use any kind of actual oil). I pan fried on med-med high heat for about 15 minutes until all the moisture was dried up and the “rice” started to get a little crispy.
Mexican Rice: add a can of drained rotel and chopped onion, peppers, cilantro, ect.
Fried Rice: add frozen stir fry veggies, soy/teriyaki sauce, and an egg or two
Cheesy rice: lower heat and add your favorite cheese blend/sour cream and melt to your favorite cheesy consistency1
