Asparagus!!!! Yes, I have had asparagus before, but was never a huge fan. Today, I decided to try and make it myself. I roasted the fresh asparagus for 20 minutes at 400 with a little olive oil, salt, pepper, and fresh minced garlic. YUM! It tastes better than when restaurants make it! Plus it's only 25 calories for 5 stalks!

    Other things to try roasted:
    Kale
    Broccolini (my favorite) or Broccoli
    Zucchini
    Portabello
    Brussel Sprouts

    Mmm I love asparagus.

    If you want it to have a nutty flavour.... dry grill the asparagus first. Then toss in a vinaigrette or the oil/salt/pepper. :wink:
