Hi, I have a daily goal of 1272 calorie intake and macro split of 40% protein, 30% fat, 30% carbs which means 127g protein, 42g fat, and 95g carbs.
Today, however, despite having eaten 43 calories less than my goal, the app shows I have reached my protein goal and eaten 42g of carbs and 61g of fat more than my goal.
How is that possible? Am I missing something here?

Without seeing your food log, I would guess you have chosen bad entries in the database. The mfp database is mostly user-entered, and many users are not very detail oriented. You do need to check each entry to either the nutrition info on the package or to USDA published info for whole foods before choosing it.1
