    You need to give us a bit more to go on. What do you like? Is there anything you don't like/eat? How easy are you talking? No skills required? Few ingredients? Less than 10 mins prep? Short cooking time? Are you looking for lunch ideas or dinner?

    I really like the balsamic chicken dish that I've just had for dinner - I served it on a small portion of rice with a side of broccoli. It's very simple to make as it's just a chicken breast, chopped onion, chopped tomatoes and some garlic / herbs / balsamic vinegar on top.     I cook a lot of curries, stirfries, chilli, bolognese, pasta bakes, Shepherd's Pie, fish pie - but I do them in bulk and, after I've served myself one portion, I bag or box the rest in to portion sizes and freeze it all. That's then a very easy meal next time I fancy curry / stirfry / chilli / bolognese / Shepherd's pie etc, as I just have to get a portion out of the freezer in the morning (or defrost it in the microwave) and heat it through plus cook some pasta or rice or noodles or vegetables.

    If it can be frozen, I usually make it large so that I can freeze a few portions.
