So, I went back to visit mother dear a couple weeks back...and raided the kitchen. Okay, yes in that way (she'd made chicken cacciatore and it was AMAZING so I took a good bit home), but I also went through her recipes. See, I'd been craving some of my momma's cooking and wanted to re-create it at home.
I've made her ham, leek, and rice pie this week. The recipe goes as follows:
Ingredients:
15g butter
3 cups cooked brown/white rice
2 leeks, chopped
5 eggs
4 slices ham/bacon, chopped (I used 100g)
60g cheese, grated (I used 100g)
500ml milk (I used skim)
Salt & pepper (to taste)
Method:
- Heat butter over stove, add leeks and cook until soft
- Take off heat and stir in cooked rice
- Put into dish and sprinkle ham on top
- Whisk together milk and eggs until combined, season to taste
- Pour egg mixture over rice mixture, add cheese on top
- Bake at 190 degrees Celsius for 25 minutes
So, how about you guys? What recipes have you deemed good enough to have 'stolen' from your family, friends, and so on?

Great idea!
Here is one I got off the internet. I LOVE these. They are great for long hikes.:drinker:
Zuzana’s Power Balls
Recipe can be found at: http://www.bodyrock.tv/2011/11/18/zuzanas-power-balls/
The Power balls are amazing to have for breakfast or as a snack especially if you are in a hurry, and need just something you can grab and go
Recipe:
Ingredients:
You will need 1 cup of oats.
Ground the oats into an oatmeal/oat flower.
Mix the oatmeal with 2 cups of almond meal.
Add 3 full teaspoons of baking powder.
Mix it well and add about 4 tablespoons of honey.
Add 4 tablespoons of coconut oil – you can melt it in a pot before you pour it into the bowl so that it’s easier to mix it in.
Cook 1 cup of carrots until they turn soft and mash them just like you would mash potatoes. You can also use a food processor.
Add the mashed carrots into the mixture in the bowl and mix it all well together to create dough for the balls. The dough should be moist and little bit sticky – if you find it too soft you can always add little more almond meal. The amount of dough you need for one ball depends on how big you want them to be. I made about 28 balls.
You can use crashed almonds or finely crushed pecans (both is delicious)
Roll the ball in crushed nuts to cover the entire surface.
Done. Just place the balls in a non stick-baking sheet and bake them in the oven for about 25 minutes on 350F.
P.S. The balls will be very tender when you take them out of the oven so don’t touch them. Let them cool down for 10 – 15 minutes and then put the entire sheet with all of your balls into the fridge. They will become more solid and won’t fall apart when you bite them.
