Hi. I'm a nearly 48 year old mom of 3 adults, with 2 grandchildren, and way too many animals (LOL). I am married, but my hubby isn't easy to "diet" with or make changes to the way we eat with, so I'm on my own on this journey. I've resolved myself to making 2 meals for dinner (1 for me, 1 for him). I work from home, so I sit all day - snacking is a thing, and it's hard to give up. We also eat out wayyy too often, so I'm working on that now too. I'm 265 pounds today, and I want to be under 200 by this time next year. My Christmas goal is to be at 252. My exercise is minimal, but I'm willing to walk through the pain. I'd love some recipes that will make dinner flavorful and something I can look forward to. I can't have milk (lactose really), and I avoid beef (way too many tummy issues with beef), but I love love love all veggies. Any tips to help me succed are more than welcome. Thanks for listening.
