These are really good pumpkin pancakes

A lightened version of this recipe. I felt satisfied after just 2 pancakes.

Light & Fluffy Pumpkin Pancakes

1 1⁄4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1⁄2 teaspoon cinnamon
1⁄2 teaspoon ginger
1⁄2 teaspoon nutmeg
1⁄2 teaspoon salt
1 pinch clove
1 cup fat free milk
6 tablespoons canned pumpkin puree
2 tablespoons I Can't Believe It's Not Butter Light, melted
4 tablespoons Egg Beaters egg substitute

Whisk flour, sugar, baking powder, spices and salt in a bowl.

In a separate bowl, whisk together milk, pumpkin, melted margarine, and egg substitute.

Stir mixture into dry ingredients.

Spray a skillet with nonstick spray and heat over medium heat: pour about 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side. Serve with syrup.

Makes 2.25 cups of batter, or about 9 pancakes at 1/4 cup batter each.
