Creamy Chicken and Wild Rice Soup (Lower-Carb, Low Calorie NOT KETO-APPROVED)

Okay, friends have I got a recipe for you. This is the 2nd time I have made this. It's lower-carb (not keto-approved) but for people watching their carb and calorie intake, it's really good. And it's absolutely delicious and super filling. Here we go:
Creamy Chicken and Wild Rice Soup
Makes 15 1 cup servings
5 Tbsp flour
5 Tbsp butter
1 lb. boneless skinless chicken breast, cut into bite-sized pieces
1 box long-grain and wild rice (either Uncle Ben's or Earthly Grains from Aldi)
2 large carrots, diced
2 large ribs of celery, diced
1 medium onion, diced
1 medium zucchini, diced
1 small yellow squash, diced
8 oz. baby spinach
4 cups reduced-sodium chicken broth
4 cups of water
1 cup half and half
5 tsp. or 5 cubes chicken bullion
Make a roux with butter and flour
Add water and bullion, stir well
Add the chicken, bring to a light boil and cook for 15 minutes
Add rice, spice mix, and vegetables, stir well
bring to a light boil then lower to a simmer. Cook for 30 minutes
Add half and half, stir well. Cook for 10 more minutes.
Voila! You're done.

13g Carbs
2g Fiber
3g Sugar
9g Protein

Sounds lovely. I'll give it a try soon although I think the chicken doesn't need to cook for 55 minutes. It'd be very dry.0

I have a similar recipe we like, but I use all wild rice, just onions, carrots, celery, and fresh mushrooms. All chicken broth, no bullion, and 2% milk. I also add toasted slivered almonds.0
