Loaded Kodiak Pancakes

I have been enjoying these pancakes so much the past few days that I am considering eating them for three meals a day! These are made with ingredients that I already have on hand. You can certainly substitute as you deem fit for whatever you don't have.

Loaded Kodiak Pancakes

1 c Kodiak Pancake mix - Dark Chocolate flavor
1/2 c pecan halves, chopped (toasted if you like, to bring out the flavor)
1/4 c protein powder
1/4 c raw cacao powder
1 tbsp espresso powder (does not give a coffee flavor but intensifies the chocolate)
splash black walnut extract (my FAVORITE pancake additive!)
1 c + 2 tbsp water

Mix all together and make 10 pancakes, 1/4 c batter each. 2 pancakes is one serving (so one recipe lasts me 5 mornings):

212 kcal
10.8 g fat
1.6 g sat fat
2.4 g cholesterol
172 mg sodium
17.2 g carbs
5.2 g fiber
4 g sugar
14 g protein

I might have the g and the mg messed up because I'm doing this off the top of my head, but the numbers are right and it's the typical measurements for each line item.

Eat them PLAIN or with skinny syrup or with unsweetened applesauce or really any way you like!!
