I like the little cardboard containers of soups and chili. I usually buy Dr. McDougall brand - they make a lot of vegetarian, high(ish) protein and fiber varieties. I eat them for lunch, with steamed vegetables. I also like to make veggie burgers (microwave) and eat them over steamed vegetables and salsa. I typically cook at dinnertime, but for lunch, I make quickie meals. My kids keep me too busy to make anything elaborate! Good luck!0
