Hey,
Does anyone here have a good recipe for meat loaf? I am looking to do more cooking but have not made it in a very long time.

Joy of Cooking. I just use all 80 or 85% ground beef.

I just add an egg, some panko, ketchup or leftover tomato paste, chopped onion if I have one, and Worcestershire or A1.
Sometimes I’ll add fat free sour cream if there’s any laying around
Victoria Taylor makes a fabulous toasted onion spice mix that really brings it with meatloaf.
Honestly, meat loaf is a fridge cleaner. Sometimes the best ones are when you add the craziest stuff. Got some leftover shredded cheese?
Make it into a loaf and put the loaf in a baking pan or pie dish, atop an onion cut in half. The onion helps it drain, and helps it brown on all sides. I like my meatloaf near crunchy on the outside. I guess you could eat the onion, too. Don’t know. Not an onion fancier.0 -
You have to saute the onion first. If you mix it with the meat raw it never gets right. Covered in a little water and a pat of butter. Untill its soft.0

I substitute a quarter to a third of the meat for vegan quorn mince, and cannot discern any difference in taste or texture. Cuts down on calories and saturated fat. Cooked or raw meatloaf freezes well. Having a couple in the freezer is handy on nights you don't have the energy to cook.0 -

Sometimes I do saute, but usually I just chop the onion very fine and this works too.0 -

I do like onion and will definitely try this next time!
Come to think of it, I could probably put carrots under there as well.0
