Staying on track

Hi all!!

I’m looking for some serious life style change people, please don’t sell me your gimmicks....A little about me

I love lifting heavy and yoga. I’m not in fad diets, just eating healthy, I mess up and derail more times than I like to admit. I am always on the look out for some food ideas, I call my kitchen JJ’s Trash Kitchen since I am the leftover makeover queen, I hate waste.....

Let’s keep it simple!!

    Welcome to MFP. There's lots of tools here.

    I think it's great you use your leftovers. I do too. What kinds of foods do you like? I've been on a baked tempeh kick lately, trying to perfect a recipe. I've also been going down the rabbit hole of fresh bread again; it's been years, but it sure is fun. My go-to until it gets too hot to run the oven is roasted vegetables. So easy, so tasty, and you can really vary it if you want. Lately I've been making mushroom barley vegetable miso soup; love it.

    I have a weakness for salty crunchy things. I don't think of them as a derail, just a side-track. I may go down there a while, but I get back on the main rails soon enough. You can too!

    I love getting creative in the kitchen. Soups are main go to when it comes to food.

    Love roasted vegetables. Brussel sprouts, spaghetti squash, acorn squash.....really any vegetables.

    Parsnips, beets, potatoes, sweet potatoes, cabbage, onions, cauliflower, broccoli, garlic, carrots.... All good at 425 in a convection oven for 25-30 minutes. I've really been enjoying purple potatoes.
