Is it possible to change or add to the nutrient list given to be able to personalize what is more important for my health?
That depends on what you mean by "the nutrient list given." There are a limited number of nutrient fields in MFP database records, and you can't change what those fields are. That is, if you want to track folic acid or copper or vitamin E, you can't do that on MFP. You can add missing data for the existing nutrient fields or edit the data already in those fields (click on "nutrients" when looking up a food on the website, then click on "no" where it's asking if the entry is correct; then you'll get an option to edit the entry).
You can also change the five nutrients that show up in your diary in addition to calories (edit under settings).0
