Getting the correct calorie/exercises

I have been desperately trying to find a good balance between calories and exercise. To start, I am a 30 yr old female, 5'5", 144lbs. I have lost a total of 61lbs so far even though my profile says different because I lost some weight before tracking on MFP. I found out I am allergic to gluten and that's when I first started tracking with MFP. I went gluten free and watched calories but often would binge and off and on I keep going back to my unhealthy and high calorie ways, then go back to restricted calories. I try so many different things I am not sure what works and what doesn't. I am mostly Paleo now but still eat oatmeal, corn, potatoes, and when we have an outing with family I'll eat whatever I want. Sometimes I still binge and it's usually unhealthy junk. Most days I restrict myself to 1200-1300 calories a day. Okay, so now my exercise part; I have a home elliptical and exercise on that for 60min 6-7 days a week shifting between a RPM of 55-69 per workout. 5 days I week i do 25reps each of= 5 different crunches, sumo squats, squats, lunges (per leg), 7 arm exercises also 25 reps each with 3lb weights and 50 jumping jacks. My question is, am I doing too little/much in calories and exercise? I don't want to over or under do either. Also I am a college student so I have a lot of sitting time, but am a mother so also am up cleaning house, cooking, cleaning, changing diapers, bathing kids, ect. I am not sure if I would be "lightly active" or "moderately active" I would love some advice on how to balance so I can keep the routine and know what I am doing is healthiest for my body.
