How in the world do you stick to portion sizes!
I’m horrible.
I can eat a whole family bag of chips and not think twice.

Buy single-serving prepackaged foods, or repackage bulk foods into single portions.
If you simply cannot stop at one serving of a given food, stop buying it. (If you live with someone who doesn't have this compulsion, they can buy their own and keep it somewhere else.)
Also, eating a lot of potato chips is not a crime, and doing so does not make you "horrible." Changing how you talk to and about yourself will go a long way. Would you say it to or about your best friend? Then why would you say it to or about yourself?2 -
Another option is to log it. If this brings you over your calorie deficit regularly then there's no dinner. Do this regularly and you want the dinner more than the bag of crisps as dinner is more filling than the crisps (well, I know I do).2
