This is a cross between a crustless quiche and a meatloaf. I had to come up with something keto-friendly while getting up at 3:30am to get to work on time. This is about 5 servings. If you are gluten-intolerant, you can sub out the flour for another thickener.
Ingredients:
10 large eggs
5 strips of bacon
4 sausage patties
1/2 a medium onion
2 cups shredded cheddar cheese
1 tablespoon flour
2 cups spinach
One diced tomato
1oz cream
lots of butter
some refined coconut oil
salt and pepper
Preheat oven to 325F.
Cook the bacon until crispy. Cook the sausage too, make sure to break it up into smaller bits. Do not drain grease. Lightly cook the chopped onion and spinach in bacon grease.
Beat all 10 eggs with cream. Mix in the tablespoon of flour evenly. Add salt and pepper to taste.
Grease the sides of meatloaf pan with generous amounts of butter and coconut oil to prevent sticking.
Mix the eggs and cooked meats, veggies, and cheese together and pour in the heavily greased pan. Add tomato but do not cook them. (They'll cook just fine in the oven)
Bake at 325 for 40-45 minutes.
Let it cool before slicing.
