Night crew and dieting don't get along

I am a 42 year old new nurse. I lost 45 lbs in nursing school by portioning my food and making everything ahead of time. Now I'm one year into nursing and 20lbs back up. I love my job but it reeks havoc on my diet. Some days we have all night to eat some days it's code after code and I can't sit down. More then just wanting the weight off I want to be healthy. My bp is very high and I have joint pain. This time I'm trying to eat clean and healthy. Any ideas on meals during the night shift would be welcome! The cafeteria is locked so we have a microwave and that's all. I have started protein shakes so any feedback on them would be welcome. I want to stay at around 1200 cal a day. I work 645 pm to 730am three to five nights a week. Exercise is out the days I work as I have just enough time to sleep and start the grind all over again. I walk on days off and try to swim.
