Lemon Coconut Energy Bars

I was in the mood for something lemony so I compiled these ingredients and came up with an amazing energy bar. I love the lemon flavor and want to share with you the recipe. I take these mountain biking with me fore energy and my kids take them in their lunches. They are super healthy, easy to make (no bake) and have lots of omega 3's in them. I hope you enjoy!

Lemon Energy Bars

Ingredients
Makes 18 bars
1 cup rolled oats
½ cup flax seed
½ cup other seed (I used raw pumpkin seeds)
2 cups soft dates (soaked in warm water for 10 minutes)
2 TBS pure vanilla extract
Zest from 2 organic lemon (make sure you use zest, that is where the flavor comes from)
¼ cup organic lemon juice
2 cups shredded unsweetened coconut
1 teaspoon salt

Directions
1. Pulse oats, flax seed, and other seeds together in food processor
2. Add dates, vanilla, lemon juice, and zest to the food processor until it clumps
3. In a separate bowl, mix coconut and salt
4. Add all ingredients, mix with hands
5. Press into cake pan
6. Refrigerate for at least 1 hour
7. Cut into squares and enjoy
