Anyone celiac?

Hey all fairly new not got the hang of things yet.
Has anyone else got celiac disease?
I find the food calories different and hard to figure out

    I don’t have celiac disease, but my husband does. He was diagnosed about 8 years ago and I’ve been cooking that way ever since. My freezer is filled with probably over a half dozen of ‘weird’ flours; I don’t even have all-purpose flour in the house. I have also learned to slightly turn down the burner heat when boiling GF pasta (more delicate). Those two items and ATK’s (American Test Kitchen) 2 GF cookbooks are about all that is needed to manage GF cooking.

    Are you having difficulty calculating/counting GF calories or just calories in general?

    Hi there! It is a challenge and may feel overwhelming at first but it does get easier! Check your seasonings, I couldn’t believe flour is sometimes in there to prevent clumping. Let me know if you have any specific questions. Or want help with specific meals. For example tacos can be easily made gluten-free. YUM!
