I make soup/beans. Great meals for a busy weak.0

For busy weeks, I like to keep some cooked grains, pulses, fresh veggies and fruits chopped up and ready, then throw things together when I'm hungry with a sauce of some kind. So I might make something like a bowl of roasted potatoes, black beans, lentils, quinoa, peppers and onions, chunky salsa and avocado with some spicy hummus, for example.
If I'm being a bit more structured that week, I might make up a big batch of soup in the crockpot, a casserole or sheet pan dinner, and/or a sandwich/burrito filling to go with my fridge stuff. So, this might be some split pea soup with a veggie-filled burrito or a broccoli-'cheese' casserole with vinegary green beans and a small side salad.0
