Healthy pancake recipe

Looking to make breakfast for supper but thinking there may be a healthier option then the packaged pancake mix.. looking for healthier ideas for tonight and in the future.

Also besides butter and REAL maple syrup.. what else could you top it with for a better alternative?

    There are keto friendly mixes out there, I'm told Costco sells a good one. As I rarely eat pancakes, I go for the full traditional version with real butter and maple syrup and simply plan a way to fit it into my calorie budget (usually during a deficit break).

    Sometimes, I make 'keto bread' in the breadmaker and use that to make a mock French toast. The bread itself tastes a bit eggy; buttered and fried in a skillet it does a decent stand-in for French toast.

    Someone posted the recipe for keto bread not too long ago. Just know that it can be quite chewy and taste a little eggy - IMO, better for mock French toast than sandwiches. It doesn't really save calories, but offers an alternative to traditional flour/sugar bread.

    What's so unhealthy about pancakes? I normally make dutch pancakes (thinner than american but slighty thicker than french crepes) which are 250g flour, 2 eggs, 500 ml milkk and a tablespoon of melted butter in the batter. If I use a good non stick pan I don't need any additional fat for frying. This recipe serves 4-6.

    100g vital wheat gluten, 100g self raising or all purpose flour, sweetener to taste (sugar/stevia), 1 tsp baking powder, 1 tsp vanilla extract, enough water to make the right consistency. Do not overmix.

    I use a spritz of spray oil on the pan as I find there is no need for butter.

    This recipe makes 3 good sized servings.

    High protein - 255 calories 32g carbs 28g protein 2g fat - and happens to be dairy free/vegan.

    As it is low fat if your macros allow top with nut butter or bacon/mock bacon and maple syrup.

    If you go light on sweetness you could have them with wilted spinach and a soft poached egg.

    My favourite way is with stevia and topped with fresh lemon juice and a sprinkling of table sugar.

    I go through phases where I make crepes all the time and always have a few in my freezer. They're so versatile but I like them best with warmed, previously frozen berries, stevia, and a dollop of plain yoghurt.

    I like peanut butter, Nutella, or berries better than syrup on my pancakes. But if you're going to use syrup of any kind, don't put it on your pancakes. Put a little puddle on your plate and dip each bite into the syrup. That way you taste the syrup every time and it doesn't soak into the pancake and disappear. It gives you much more control and you can use much less.

    You know the little sauce cups you get at restaurants? You can buy those. I have a couple of little stainless steel ones that hold about 2 fl oz - sometimes when I have frozen waffles or similar, I'll put the syrup cup on top of the toaster oven, and in the time it takes to cook the waffle the refrigerator-cold syrup will be gently warmed through and ugh it's so good. It's important to note again that my cups are metal and safe to be heated up like that, don't do that with the disposable or even reusable plastic ones. Silicone might be OK if they're meant to bake with, just be careful picking them up; you probably won't hurt a ceramic cup doing this, but ceramic is a good insulator so your syrup might not get warm in the 6-10 minutes it takes to bake off a frozen waffle.

    I make a cottage cheese pancake- Basic Recipe:
    2 Scoops, Protein & Superfoods Vanilla Protein Powder
    1 cup, 2% Lowfat Cottage Cheese
    100 g, Gluten Free Rolled Oats
    8 oz, Egg 3-4 eggs and add additional egg white to 8 ounces)

    I skip the protein powder for making into a crepe, I then roll chicken curry, almost any saucy dish and make it a crepe.

    These freeze well, I snack on them and the kids, heat in toaster.

    I guess I would need to know what you are defining as healthy or healthier. I've never really thought of pancakes as something inherently unhealthy or "junk food". I make them most weekends for me and the kids for Sunday breakfast. We use Kodiak Cakes mix and I just use butter and real maple syrup...those things are pretty much all natural so I really don't see any reason to fuss.

    Oops, did not include directions- I grind my oats first to a flour or meal in blender then add other ingredients and blend- warm griddle, I use coconut oil for pancakes to grease pan. If making a crepe for a savory dinner I will use olive oiler avocado oil or canola oil instead.

    Applesauce (unsweetened) is good on pancakes instead of syrup or butter.

    I eat pancakes twice a yr so I don't f'k with them. Lots of butter and syrup and sausages on the side to use up the maple syrup of course.

    Birch Benders makes a really good Paleo/keto pancake and waffle mix. They also make Keto syrup, but I can never find it it stores anymore. Lakanto makes good keto syrup, and it's pretty easy to find in stores. Birch Benders also makes keto toaster waffles. I usually top them with butter, and either berries, or a banana. Sometimes I use cashew butter instead of regular butter.

For a healthier topping, what about a bit of nut butter?

For something quick, Kodiak has good healthier options, as well as some that are higher protein. If you have an Aldi's, they have their own brand, too.     I’m obsessed with many versions of pancakes- I use: (use cookie scoop to make about 12 or more 2 inch pancakes)

    1/2 cup of any pancake mix but preferably a protein packed one like krusteaz
    1 scoop PBFIT powder
    1 tsp baking powder
    1/2 cup lightly sweetened or unsweetened orgain protein almond milk.
    1/4 liquid egg whites
    1 tbsp monk fruit sweetener
    Splash of vanilla extract

    (Add in what you want, cinnamon, cocoa powder, blueberries, etc)

    I don’t use butter or syrup, just dust it with powdered sugar.

    This is usually about 100 calories for four to five pancakes depending on your addins.

    I eat these type of pancakes for breakfast almost daily, with a bit a fresh fruit, scrambled egg whites and my indulging coffee with vanilla protein almond milk.
