Eating after Endurance Events

Last weekend I did a 31-mile charity bike ride- the longest distance I've ever done (typically I ride 20 miles on Saturday and again on Sunday in good weather). I'm happy to say I loved it- didn't break any speed records but felt great afterwards.

According to my HRM I burned over 1,400 calories. I'm at my goal weight but wouldn't mind losing a little more, so I didn't eat that much more than usual Saturday after the race. Sunday I woke up at 5:30 AM ravenously hungry. I made it a point to have extra helpings of meat and fish Sunday. I slept well that night but yesterday I had to stop myself from eating everything in sight.

I've got a 38-mile ride for MS next month. How do the rest of you balance replenishing your body after an event like this with not overdoing it? Is it best to load up later on carbs, proteins or both?
