Looking for a healthier pancake recipe

I periodically get a craving for pancakes. I tried the following recipe:
2 eggs
1/2 banana
1 scoop protein powder (I had none so used 1/4 cup regular pancake mix)
splash of 1% milk
and I selected a sugar free syrup
This ended up being lower calorie than my usual breakfast and more protein, so I like that aspect. My pancakes came out thin, more like crepes. Perhaps the splash of milk watered down the batter and can be omitted? And the taste was decent but I'd like to try some other recipes.
Any suggestions? I won't be eating them frequently so am OK with a higher calorie recipe as long as it doesn't blow my whole day of calories out of whack.

Sure, leave out the milk or try reducing it to 1 T or whatever until you get the consistency right.
Here's my recipe. It's nice and thick, but higher calorie, and syrup and butter have not yet been included. You could save 92 calories by omitting the walnuts. Ignore the (1/2 cup) in the cottage line - 56 g = 1/4 C.

This is my go-to breakfast right now. It will make 30-40 pancakes per batch, depending on how much cashew milk you use. I like a more crepe-like pancake. I brush them with Greek cream cheese or zero calorie chocolate syrup, roll them up and eat them. Any flavor cake mix works. I supplement carrot or spice cake with extra shredded carrots. Will shred an Apple next time. It’s not necessary to add skinny syrup. I just like mine a wee bit sweeter.

PS these will cook much faster than regular pancakes so keep an eye on on them.0

i like making these to meal prep!
1/3 cup (45g) paleo birchbenders pancake mix
1.5 scoops (45g) peanut butter cookie pescience protein powder (code SCRIPTS to save)
1 tsp baking powder
1/4 tsp salt
2 tbsp (28g) starberry blast american dream nut butter almond butter (code AMY10 to save)
1/4 cup (60g) liquid egg whites
1/3 cup (80g) plain greek yogurt
1/3 cup (80mL) cashew milk
1 tbsp (2g) freeze dried strawberries
-mix dry ingredients in small bowl
-mix wet ingredients in separate bowl
-combine dry with wet ingredients and mix in dried strawberries
-pour into 8x8 baking pan lined with parchment paper and sprayed with nonstick spray
-bake at 325 for 18-25 min or until toothpick comes out clean
-serve with pancake syrup
makes 4 large bars
nutrition per bar: 8.7C 5.8F 16.5P (153 cal)0 -

This Weight Watchers recipe looked interesting:
1 1/8 cup self-rising flour
1 cup of plain Fat Free Greek Yogurt
2 eggs
1/3 cup of unsweetened almond milk
1 1/2 tsp of vanilla
Self rising flour recipe - for each 1 C flour add 1.5 teaspoons baking powder and 1/4 teaspoon salt1 -
This is how I make mine -

It makes 2 medium pancakes, and i top it with blueberries and a bit of maple syrup.
Similar to my recipe, but I don’t include a banana & I blitz the oats, so are smooth like flour, I add the blueberries to the batter so they burst with flavour in your mouth! I like to have a blob of fromaige frais with them!
Like the addition of cinnamon….. will try that next time 😍

You could separate the eggs and whip the whites and fold into the other ingredients and that should result in a fluffier pancake. Personally I eat pancakes maybe 3 times a year and will never compromise on my regular ingredients for the sake of a few calories spread out over months until the next time I eat pancakes, doing that makes my brain cells fall out.0
