anyone bake with rice flour?

How does it compare texture wise to white flour? I bought some almond flour at costco and it is horrible, the texture and it makes everything taste like cardboard! Anyone know of other good alternatives? Wheat flour was the same, yuck. My goal is to find an alternative to bleached white flour to make cookies, etc with. The costco stuff was ok for pancakes, but anything I put in the oven and bake it ruins.

    Look up recipes for gluten free baking. You can't just do an even swap for wheat flour, you need to mix flours and occasionally add other ingredients to achieve similar flavors/textures to traditional wheat-based baking. Wheat flour has a very specific chemical make-up that creates the flavors and textures in traditional baking, so alternative baking recipes require some adjustments to make up for that.

    Almond flour is wonderful, but it's not meant as a direct swap for wheat flour. I've made wonderful coffee cakes, waffles, pancakes, and muffins with almond flour, but you need to use a recipe specifically formulated for it. Baking is essentially applied chemistry, and if you change one of the components in the recipe, you won't get the same chemical reaction that you were originally looking to get.

    Rice flour is a pretty standard option in gluten free baking, but it's usually used in a mix with other types of flours and/or starches to achieve the correct texture, and again, there are often adjustments that need to be made to the recipe to make it work. You can learn how to make your own adjustments to recipes to make it work, but it's honestly just easier to find and follow a recipe that already works, especially until you're more comfortable with alternative baking.

    When i make a batter for my oven fries or nuggets i bake. I make Oat flour. I find its much closer to wheat and taste is really good.
    Texture is right on par with flour.
