Thanksgiving Turkey Meatloaf 350 per slice

In a medium bowl add 1/8 C. Fat-free or light Sour cream mix with 1/2 C. water add crumbled up Ball Park's Everything Hamburger Bun 2 of these, and set aside.
In a large bowl add 1 pound Ground Turkey, 1 Egg, 1 C. finely diced Celery & White Onion, sprinkle with salt 1/2 teaspoon, add 5 Chinese Spices about 2 teaspoons,1/2 Cup Dried Craisins, now add the Sour Cream & bun mixture mix very well until combined. With this Turkey meatloaf mixture, you can do a lot with it. I took 1/2 of the mixture placed in a 9" round glass pie dish lined it with tinfoil, butter sprayed it then added the 1/2 mixture. I then took Bob Evans Mashed Potatoes & placed them on top of spreading them all over to about 1/4" thick. I then took the remaining Turkey meatloaf mixture & placed this on top. I lined another baking sheet that would fit the 9" round dish placed this on their good thing I did b/c of course, it spilled over a little bit after placing the glaze on top. Place in a preheated oven at 375 for 45 minutes. I checked on it after 25 minutes & I butter sprayed the top of it & placed it back in the oven. For my glaze, I placed in a medium bowl 1/2 C. 50% Sugar-Free BBQ Sauce I used Krogers brand, 2 Tablespoons Honey, 1/4 C. Sugar-Free Strawberry Jam I used Polaner's, Sprinkle in Chinese 5 Spices, Salt, Red Chili Flakes, 2 Tablespoons Pickled Relish, & 1/2 C. Craisins mix all together. Adjust the seasonings to your liking also you can use any jam you like. After 45 minutes check the Turkey Meatloaf it should look like it's done. Now set the oven to 400 add your glaze all over the top of the Turkey meatloaf & bake another 15-20 minutes. Then take it out of the oven cut it into 8 wedge slices, & serve. This Turkey meatloaf is out of this world delicious. I figure the calories per slice is 350. Bob Evans's mashed potatoes are 150 for 1/2 a cup, and when I looked up other people's Turkey meatloaves it was 200 or so. It's very filling too. This would make a great alternative for a Thanksgiving dinner. Since I had some spills I would recommend a 2-4" high baking dish or a meatloaf pan, or you could get 2-9" pie dishes & have on top only the mashed potatoes & top this with the glaze or serve on the side, just heat up the glaze in the microwave for 3 minutes or so.
