Spinach Lasagna

Thought I would share a recipe. This is a super yummy lasagna recipe that I have eaten for years! Never get tired of this.
Spinach Lasagna (serves 8)
4 c fresh spinach, plus 1 extra cup
1 onion, chopped
1 tbs oregano
1 tbs basil
1 tbs thyme
1 tbs olive oil
2 tbs minced garlic
4 c of your favorite tomato sauce (I use homemade)
2 c of f/f or 2% cottage cheese
8 oz mozzarella cheese 2%, shredded
1/4 c grated parmesan cheese
1/2 fresh chopped parsley
salt/pepper to taste
1 large egg
2 large eggplant
Preheat to 350.
Thinly slice eggplant, lengthwise, into equal sections. Salt and pepper, set aside.
In a large pot, sautee 4 c spinach, onion, oregano, basil, thyme, olive oil, garlic over medium heat. Once spinach begins to wilt, add tomato sauce and simmer for 15 min.
Meanwhile, mix cheeses, egg parsley, salt/pepper together in a large bowl.
Put a small amount of sauce on the bottom of a lasagna pan. Layer eggplant, sauce, cheese mixture, fresh spinach leaves and top with a little more sauce and spinach leaves.
Bake for 1 hour or until cheese is bubbly.
You can also add mushrooms to your liking, green peppers, capers, or ground beef/turkey/pork as well.
