Brain trusts I have a question what are some good vegetarian meals wife doesn’t eat meat is allergic to seafood and fish and is also celiac I need new ideas ? Please

    Ezekiel tortilla with smoked tofu, dill mustard, a little cheese, sauerkraut, thin-sliced onion, heated.

    Edamame/mung fettucine mixed with cooked (stir fried or stir-steamed, even roasted) veggies of choice and a sauce of almond or peanut powder, rice vinegar, chile paste, other seasonings (garlic, ginger, whatever) as desired. Some raw finely-chopped green onions or sweet onions on top is nice, too.

    Bean or pea soup with veggies.

    Regular meatless chili with beans and tempeh (add some dark miso and/or some unsweetened cocoa powder for extra hearty flavor); or white chili made veggie broth, onions, whole white hominy, dried chipotles peppers or fresh chopped poblanos, white beans, maybe firm tofu cubes added at end just enough to heat (put the cubes in the oven for a while if you want them to be a bit firmer and absorb more of the broth). Corn bread on the side, or cornmeal dumplings cooked on top, is nice if one has the calories.

    Red lentil or chickpea pasta with tomato sauce, sauteed mushrooms, veggies, some flavorful cheese sprinkled on top (or nutritional yeast).

    Spagetti squash with tomato sauce, possibly a tomato sauce with powdered mushrooms (dry mushrooms powdered in blender or food processor) and lentils in it for extra richness.

    Lasagna with cheese and veggies and tomato sauce, or a mix of smashed Winter squash and sage with ricotta.

    Vegetarian moussaka - recipes abound.

    Various kinds of enchiladas, tostadas, burritos.
