What are some of your favorite healthy veggies recipes to eat

Don't really use recipes for veggies...I mean some recipes I use include veggies in things like stews or casseroles and such...but generally, I just roast or sauté whatever vegetables I'm having as a side.0

My favorite way to prepare veggies is to slice them in pieces throw in a big bowl and add EVOO, plus herbs and or spices--mix well. Prepare a large cookie sheet with parchment paper. Spread the veggies out and roast in a very hot oven until crispy.1

I like veggies like green beans, mushrooms, squash, celery, and bok choy steamed with a medium curry powder til tender. Sometimes I'll add a bit more water and some nutritional yeast to thicken it into a cheezy gravy.0

I love veggies!!!! Okay, here are some ways I do them:
My husband is Korean and his mother has been teaching me various veggie ways over the past year. SO...pickled veggies and various other "banchan" (side dishes) is something that can be prepared ahead of time and then quickly grabbed: this might be various kimchis (cabbage, radish, cucumber) or bean sprouts etc. Also, kimchi that is a bit sour can always be fried or turned into soup. Seaweed can also go in soups. Here's a blog I've looked at a few times or recommended to friends who want to try some of the recipes (without someone around):

My favorite roasted veggies are things like cabbage, Brussels sprouts, green beans, beets, cauliflower, zucchini...and that can be simple with just some EVOO and light seasoning.
Favorite raw veggies are broccoli, cauli, and carrots...I also love salads of all types...try throwing some roasted veggies on top of salad greens.0
