Summer salads

Because it's summer down under, we've been eating a lot of salads. I've been focussing on adding protein to my salads, so mix up a range of leaves, avocado, cucumber, radish and tomato with edamame beans, seeds and nuts (flavoured differently each time...my
two favourites are tamari and sumac), vegan feta (I make it with coconut oil, almond meal, nutritional yeast and soy milk) and dressings which I make with either a miso or tahini base.
I sometimes crisp up some chickpeas and add those.

Any other quick and easy ideas for adding plant-based protein in salads?

    I make a cold quinoa salad with a lemon, olive oil and vinegar dressing. I add salt, pepper, garlic, cucumber, feta, tomatoes, onion and bell peppers. You can throw in whatever you like.

    I often have falafel with salad.

    We had a lot of celery in the fridge so had Waldorf salad tonight. Dressed with light ranch instead of mayo. Made with toasted macadians instead of walnuts. For me, this is best when the toasted nuts are generously salted, so you get surprise pops of salty nuts and sweet raisins.
