Apps and advice for logging workouts

I've always worked out at my home gym based on what looks fun or "I didn't do this last time". I'd like to record what I do towards building a schedule and tracking gains but I have no idea how to. I've only got as far as writing what I'm doing on a whiteboard.

I know the my fitness pal app has basic functionality but it doesn't seem like it'll suit me.
I'm open to apps, websites and more old school techniques... Both how to structure recording information, and tools to help me do it.

So any recommendations what and how YOU do it, or resources to help me figure it out would be greatly appreciated as I try to get into shape for '22

FitNotes is very flexible workout logging app.

Log sets, reps, weights for resistance training.
Log cardio type time, distance (or other metric).
Customize your workout exercise, build new ones, view history with graphs, ect.

Due to being so flexible, it of course starts out perhaps feeling overwhelming, but once setup it's very nice, and then changes are easy.
