What do I do with curly endive?

I received some curly endive in a food box and I’m not sure what to do with it. It’s really bitter but apparently cooking it mellows it out. I need to find a creative way for my family to eat it. Does anyone have recipes they could share?

I would try asking the question on the thread "For the love of Produce" in the "Food and Nutrition" section. People post a lot of questions about what to do unfamiliar vegetables or vegetable gluts and get answers. My go to recipe is "Frisee aux lardons" but salad with bacon, croutons, a sweetened vinegaigrette and poached egg might not be right for you if you family finds it too bitter to eat raw. The second recipe uses balsamic vinegar to sweeten the dressing.
