If you've worked out what you want for protein and fats, your carbohydrates would be the balance of what is leftover. Your macros (carbs, protein, fat) are what make up your calories...4 calories per gram of carbohydrate, 4 calories per gram of protein, and 9 calories per gram of dietary fat.

But, really, no one can tell you exactly how to split your macros. You have to experiment and see what works for you.

Example: I exercise nearly daily, burning 500-1000kcals. If I don't re-fuel with at least some carbs, I feel rather sluggish.

As many as fit in your calorie allowance is the simple answer.

As you haven't said if you are eating to a same every day goal, a variable goal in line with exercise or how you have worked out your protein and fat allowances or if those goals are minimums or maximums the answer is "it depends". More detail would help.

Personally I tended to use carbs as the filler once I had met or exceeded my protein and fat goals (I treated them as minimum goals not maximums) but the actual amount of carbs varied hugely depending on my exercise.
