Good Afternoon All,
I know we can google Pinterest and what not but Id really like some ideas from those of us who are calorie counting and portion controlling. I have lost weight 3 times and last year is the most weight i loss which was 63lbs Well Long story Short i went from 260-195 In September i was 195 and Now i am coming down from being 212 just this year. You heard it I gained weight. I used to work out 5-6 days a week and that seized when i injured my back and got my tooth pulled, So now im back at it again, I had a goal weight of 180, im 42 years old, and i have PCOS , BP meds. I would do Keto but i can do all that meat all the time but with PCOS i have to watch carbs and starch. So basically eat like a diabetic. Any recipes ideas with CHicken, shrimp, or any meat but those mainly with veggies would be greatly appreciated, Thank you

I don't really have "recipes", I just marinate or season whatever protein with whatever I'm feeling like at the moment and throw it on the grill or in a pan and roast or sauté whatever veg I feel like or happen to have on hand. I keep my cooking pretty simple during the week and do more complex recipes on weekends. Really, any healthy recipe works...and IMO, most home cooking is pretty healthy unless you're going out of your way to make it not so...mostly it comes down to portions. I have a relatively large calorie allowance, so I typically just have bigger portions than my wife. I literally get all of my recipes from Pinterest.1

Thank you for that insight though. I bough my husband a grill for Christmas but he is waiting for the snow to go away to put it together I guess, but also we are in condo so he needs fire extinguishers also lol. I do have a George foreman Grill ,, but I don't think I can put veggies on there can I … I think I would love to do that if i can accomplish it,, My husband is a better cook than i am lol so i need to find these Marinades that you mentioned to get the flavor,, Me and Pinterest dont like each other I swear0 -
Here are some recipes I made recently that my husband and I both really enjoyed. I am not doing low carb but I do watch my carbs in order to stay under 120G per day. My husband is type 2 diabetic but we manage to keep his A1C under control by keeping his daily carbs down to no more than 40% of his daily calories.

I used cod for this one since it is less expensive than the other types of fish mentioned in the recipe. It worked fine for this.
Here's a good recipe for salmon. I used olive oil since I didn't have any avocado oil.

I didn't use the nuts in this one since my husband doesn't care for them but I'll bet the crunch from the nuts would be nice.

This one didn't look very appetizing in the oven so I turned the broiler on for a few minutes at the end, which helped. It tasted really good and the chicken was super moist.

Hope you enjoy them as much as we did. Good luck!1 -

Veggies: Almost any of them, put even-sized pieces on a baking pan, spray lightly with olive oil (put can on scale, tare/zero, spray, return can to scale, read the negative, log that much oil - if you're being that precise. Roast at 400F until done and nicely browned. If you're keeping carbs on the low side, some reasonable choices are broccoli, cauliflower, cabbage, brussels sprouts if you like them. When they come out of the oven, you can toss them with some minced fresh herbs or dried herbs and some kind of good vinegar. (If using dry herbs, combine them with the vinegar first so they aren't dust-like.) Prepared mustard (from a jar) thinned with vinegar is also good on veggies.
I make batches of roasted veggies, put them in the fridge to combine with other foods during the week, either cold in salads, or gently reheated in a stir-fry or something.0 -
This is one of my favorites recipes. I believe it is whole30 compliant. I use Paesana tomato and basil sauce from Costco because it doesn't have added sugar. http://stayfitmom.com/paleo-stuffed-peppers/0

I have PCOS. It’s a complete myth you have to have a low carb diet. I have lost 20 lbs, kept it off and completely kept my symptoms under control. For example in the morning I eat a full serving of oatmeal, cook in 184g of egg whites with 47 grams of blueberries. Lunch I will have a serving of Alexia fries and 4 oz of grilled chicken breast with a side of 100 grams of brown rice or Brussels sprouts. Dinner maybe protein pancakes. I use a serving of pescience vanilla protein powder, 47 grams of egg whites with a dash baking power add in Lilly’s sugar free chocolate chips and a little water to get them as thin or thick and done. I usually have five meals a day like those. Do not listen to a lot of the crap on the internet. Pinterest is the last place to get medical advice. It’s more like trial and error. What works for you. I don’t really eat dairy because of the inflammation it brings to me. I feel the difference. Other women with pcos can have dairy. It just depends on you! Hope that helps!2
