Calorie deficit for weight loss

When maintaining a calorie deficit for weight loss, how do I return to my maintainence calorie recommendation to maintain my goal weight?
I find that when I try to do this, I simply start putting weight on despite continuing with an active lifestyle and increasing some of the portion sizes of my meal plan to return to maintainence calories.
