Keeping carb count low with limited to no animal products

I am experiencing similar issues as those mentioned in several other discussion posts. I rarely eat meat, (I do eat milk and eggs) and while I supplement with protein powders, I need some low carb, no animal product recipes. Please advise.

    There are some decent recipes in The Vegan Ketogenic Diet cookbook, its relatively inexpensive. I guess it depends on where you land with artificial sweeteners since a number of the recipes call for them.

    For the most part I stick with tempeh, tofu, and soy curls as a protein source and then mix in leafy greens or other lower carb veggies. Trader Joes hearts of palm noodles are ok but kind of expensive. I will use them or make zucchini noodles when I was low carb pasta options. Explore makes some good Edamame noodles but they tend to have a higher carb count so I don't have them often.

    I use the tempeh for my noodle dishes with a marinara sauce. Tofu I usually cook in our air fryer coated with avocado oil and seasoning of some type. I use the tofu in salads and as a main dish with something like squash and zucchini. Soy curls can be used in just about anything but they need to be seasoned once rehydrated.

    Most of my meals are either salads of some type, stir fry, or a protein source and side of veggies. It's fun to experiment. This week I made a stir fry with tempeh, kimchi, and seasoning. I then added in zucchini and squash cooked in the air fryer. I have to keep my meals vegan at home since the wife is pretty strict so I have some eggs and dairy on their own elsewhere. Being that you have eggs and dairy as an option there are probably decent vegetarian cookbooks out there to draw from.
