MFP sets my monounsaturated and polyunsaturated fat goal as 0g zero yet I have the liberty of 24g of saturated fats. Why? An avocado or olive is apparently off limits entirely yet butter toast is fine.

Most mainstream nutritional organizations don't set a target level for mono/poly fats, so neither does MFP. MFP's zero could be interpreted as "no goal established". Of course mono/poly fats are fine, within reason; and most folks would be well seved by treating the sat fat "goal" in MFP as a rough maximum.
You can customize your fat goals in MFP. If you want a mono/poly target, set one.

Some nutrient goals are maximums, some are minimums.
Saturated fat is a maximum, but protein is a minimum, for example.
Unsaturated fats have a minimum of 0 because there is no RDA according to any health organisations. The more the better, and logically your fat total minus your saturated fat limit is your minimum for unsaturated fats (poly and mono combined).0
