Nutrional questions for RD

I am 48 and have insulin resistance PCOS and am having hard time to lose my weight. My question is what I can eat at work besides peanut butter and jelly sandwiches. I am using sugar-free jelly, keto bread, and peanut butter that has low carbs to fiber ratio it is like 3:1. Problem is I am a nurse that works nightshift and we are short staff so we rarely get out supper break
I work 12hr shifts. Doing this type of sandwiches because can take a bit and continue the on to work. Will eat an apple or pear or both. Our break room isn't even close to our work area so hard to have hot food to eat this is why I am eating sandwiches. Do you have other suggestions of what I could eat that is cold that I can keep in lunch bucket with my water.

What is a lunch bucket? Are you looking for food that you can carry around while working, or are you looking for something else than what you eat now? If something else: why if it keeps you full? You can experiment with different kinds of foods, but what keeps you full and happy is totally individual and likely totally different than for me, or the next person answering. What you need for weightloss though is quite simply less calories than your body burns. What you eat for that doesn't matter, other than for satiety.0
