You can kind of calculate how much. to gain one lbs of fat you need to consume 3500 calories over your maintenance calories. Thus how big is your cheat day in calories over your maintenance calories. 1000? You might gain 0.29 lbs of fat. But if you're in a deficit the next day then it evens out.1

Depends on how much you eat. I've had meals at a restaurant where I'm not even through the appetizer and have blown my deficit for the week, and that's not even getting into the meal itself! Add in drinks and anything else that day and yes, you can gain weight with a 1 day binge even if you're in a deficit all the rest of the week.
A few hundred calories or some smaller amount - depends on how close you normally eat to maintenance. Like the first responder posted, it really boils down to the simple math. Weekly averages over daily - I've been known to "bank" calories during the week knowing I wanted a meal out over the weekend I could enjoy a little more than normal, just have to watch that weekly total.1
