Hi, on the food chart , my total fats do not equal my saturated, polysaturated and my monosaturated total. Where is the difference? I"m confused.

Probably omissions in the database entries. A lot of food labels only show total fat and saturated fat and omit mono and poly-unsaturated fats as they aren't required to be labeled. Database entries are crowdsourced by users and nutritional labels are the primary source used to make entries. If it's not on the label, it won't generally be entered by a user. Also, given the nature of crowdsourcing, some entries are in error or a particular user didn't care about adding all of the nutritional information so they omitted anything non-relevant to them.1
