It is basically used in a similar fashion as rice or any other similar grain such as quinoa. It doesn't have a lot of flavor, so it carries the flavor of whatever else you're having with it. It should be soaked for 8 hrs for best results and a creamy texture...soaking also enhances bioavailability of other nutrients in millet. You can have the cooked grains cold or warm as a breakfast cereal. In Russian and other Slavic cuisines it's often combined with pumpkin and made into a sweet porridge similar to this:
