Hello ,

I am 38 y old 90 kg male , diabetic.I live in India & have heard a lot about millets for high fibre , low glycemic index properties . Not sure how to use them and include in daily diet . Please share some tips and recipies .

    It is basically used in a similar fashion as rice or any other similar grain such as quinoa. It doesn't have a lot of flavor, so it carries the flavor of whatever else you're having with it. It should be soaked for 8 hrs for best results and a creamy texture...soaking also enhances bioavailability of other nutrients in millet. For cooking, typically 1 cup of soaked millet to 2-2.5 cups of water. For extra flavor you can use broth.

    You can have the cooked grains cold or warm as a breakfast cereal. In Russian and other Slavic cuisines it's often combined with pumpkin and made into a sweet porridge similar to this:

    Or, you can just use it in place of rice with any dish. The cold grain are also quite nice in a salad:
