Hate fish and not a big fan of beef, ideas?

I need good ideas for chicken and some for beef. Even some for just veggies. Anyone got some ideas that taste great?

    just get a roast, season, bake.
    side with some greens/potaters.

    Bam. Protons, carbs, fat.

    I have the Taste of Home Comfort Food Diet Cookbook, it is a great starter guide and it is easy to find recipes in a certain calorie range (although for accuracy, you may want to calculate your own calorie count using the recipe tool on here). Their recipes are versatile and easy to modify for your personal preferences.

    "Skillet meals" are super easy and as you can do about any kind of combination, you can't go wrong. Just cook your vegetables (frozen or fresh), pasta or rice (optional), meat (if raw, cook seperately before adding), seasonings and cheese. Heat through and you have a full meal ready to go!

    I made one just this week with 7 oz smoked turkey sausage (cut in small to medium size pieces), 1 package frozen stir fry vegetables with noodles (heated through in water instead of the package's suggestion of vegetable oil), 1/3 c. mexican blend 2% milk shredded cheese, garlic powder and onion powder. With my ingredients and measurements, it came to 411 calories for half the skillet.

    For vegetables on the side, alot of times I add a little bit of Mrs. Dash Garlic and Herb or other seasonings, depending on what I feel like. It allows the flavor of the vegetables to come through with just a hint of the seasoning flavor and is quick and easy.
